• Rumor has it David Bouley has "let go" of corporate chef Shea Gallante. This report has not been confirmed, however, as further inquiries have merely resulted in eye rolls and knowing smirks. Besides, it’s not really our job nor inclination here at PX This to sweat and/or verify these things (we’re not a fucking foodie blog, dammit!) but, you can feel free to bear in mind that since its 2004 inception, PX This has never been wrong.

It’s much more fun to sit back and watch others do the work, anyway. Imagining the PR people and whanot suddenly scrambling to send appeasing press releases to Florence Fabricant is always good for chuckle.

 

John deLucie responds via SMS to the persistent e-mails PX This has received that he was "fired" and not simply "on leave" from The Waverly Inn. He writes, "I’m a partner. How can I be fired?"
Mmmkay? Got that? We hope you’re satisfied now. Just sayin’.

 

John McDonald replies to an inquiry about the renovation of Chinatown Brasserie: "Eh, we haven’t even started yet… you know how it is."

Anne Burrell et al Sued…

Chef Anne Burrell et al Sued for Discrimination…

PX This has recently obtained the official Supreme Court docket (Index No. 108471-2008 Filed: March 23, 2009) for Susan Kendall Bradford, Jennifer Sue Lim, and Sarra Hennigan VS Anne Burrell, Centro Vinoteca, Sasha Muniak, and George Elkins alleging that the plaintiffs were subject to "discrimination" and "retaliation" in violation of the Human Rights Law. Among the plaintiffs complaints are the accusations that (former Centro Vinoteca chef) Anne Burell subjected the plaintiffs to persistent ridicule and disparagement, at times calling the plaintiffs (all formerly employed by Centro Vinoteca) such derogatory terms as "slutty," "saggy," "ho," "whore," and "stupid dumb whore… idiot." The plaintiffs also assert Burell persistently addressed them mockingly, commenting on their "cleavage," and "harassing" them with such offensive remarks as, "have you fucked that [co-worker] yet?" The plaintiffs further allege they were wrongfully terminated in "retaliation" for their "complaints" about Burrell.

The lawsuit charges that Elkins and Muniak were aware of these circumstances but failed to address the situation in a manner consistent with the NY State Human Rights Law.
According to the docket, the defendants Elkins and Muniak sought to dismiss these claims "as asserted by all plaintiffs, and as asserted by Hennigan against Burrell, …the Complaint is devoid of any allegation against either Muniak or Elkins or of any actionable comments made by Burrell."

"Additionally, plaintiffs have failed to adequately allege that they suffered adverse employment actions by Muniak and Elkins. As to the remaining allegations which do not involve Burrell, such allegations do not identify (1) who allegedly told Bradford to dress nicely for New Years’ Eve, (2) the manager who allegedly told Lim and Bradford to work during brunch, (3) who allegedly replaced Lim after she left for a few days when her mother passed away, (4) who fired Bradford and gave Bradford’s shifts to the new bartender, (5) who allegedly fired Lim, told her she was being suspended, or which manager never returned her calls, or (6) who allegedly terminated each of them Bradford or Lim, or constructively terminated Hennigan. And,to the extent my of the above-allegations constitute adverse employment actjons, plaintiffs have failed to allege individual liability against Muniak or Elkins under New York law. Their names a re absent from all such allegations, and plaintiffs do not specifically allege that Muniak or Elkins were personally involved in any of said conduct. In addition, those allegations made ‘collectively’ against defendants are similarly insufficient. Thus, plaintiffs failed to state causes of action against Muniak and Elkins."

The Supreme Court, however, disagreed and found, "the Complaint sufficiently alleges Muniak’s, Elkin’s and Burrell’s alleged managerial roles at Centro, their ability to hire and fire plaintiffs, their failures to sufficiently investigate the complaints made against Burrell, and the ultimate termination of Lim and Bradford, and constructive termination of Hennigan." Furthermore, "…plaintiffs’ complaint sufficiently alleges that defendants terminated or constructively terminated the plaintiffs after defendants received complaints concerning Burrell’s alleged discriminatory conduct."

As it currently stands, "dismissal… is denied." The case is presently ongoing.

MORE on Sevigny & Khan (& Civetta. Sort of.)

When we broke the story on Civetta’s closing, little did we realize it would become the *Nightlife Bloggers’ SAT on Reading Comprehension. Or maybe that’s more like the Jellus Bloggers’ SAT on Integrity and Pettiness? Whatever! We digress.

This just in from a tipster: "Did you see your old buddy Steve [Lewis]’s column today? Funny how Nur [Khan] supposedly denies working with Paul [Sevigny]… from what I hear, they maybe are looking into a space in SoHo together, and Brad Zipper is their money guy… I don’t know how (or if) he fits into Civetta, though."

Another source adds: "…I have seen Brad [Zipper] at Civetta a couple times — he does live around the corner and is quite friendly with the staff… but I wouldn’t say that he’s involved in Civetta…"

And yet a third ‘insider’ speculates: "If I had to make a semi-educated guess, I’d say it could be possible there are two deals in the works? If the so-called SoHo space with Zipper is a go, it might still be a ways off… the Civetta thing would be a way for them to start up now, get their feet wet, then move along to the next project once that’s in the swing of things…"

 

*By the way, what does "the new Beatrice" even mean? As far as we know, The Beatrice Inn is closed, indefinitely— just as we predicted (despite various uninformed opinions throughout the blogosphere contrary to our deduction). When Eric Goode & Co opened MK, did they call it "the new" Area? When Peter Gatien built Club USA, was it called "the new" Limelight? Hmm, perhaps they were— by those who were narrow-minded, shortsighted and ignorant.
The Beatrice Inn was the name of the space at 258 W 12th St, long before Matt Abramcyk and Paul Sevigny took over. For anyone to take that very same name and apply it to another location would, in short, be asinine.
Might we suggest pulling your head out of your navel for a change, and try some real erudition on for size. You might be amazed at what you can learn about reality and our industry if you just freed your hands from that circle jerk, and say (for example)— picked up a book every once in a while.

Civetta Closing – “New Concept” to Come

This just in from a tipster: Civetta has abruptly laid off most of its staff and is closing for one month to make way for a new concept that will tentatively be manned "…by Nur Khan and Paul Sevigny." The termination comes as quite a surprise to the majority of those involved, as Civetta was just building its mostly-word-of-mouth reputation as a "pretty darned good restaurant."

Apparently, an unnamed very deep-pocketed "investor" with "ties to several projects in downtown" Manhattan, including possible "involvements" with such high-profile operators as "Andre Balazs and Serge Becker," is the primary impetus behind Civetta’s sudden shift in momentum.
Civetta will close its doors next week on December 1st.

Gee, and we hadn’t even had the chance to try it yet.
Oh well, maybe next concept.

Little do either realize the space has also caught the eye of two F&B powerhouse contenders as well. May the best man biggest check win!

 

• Which nightlife impresario who just had a baby is (typically) shagging his pretty, young bartender? Unfortunately for him, she now has bragging rights and knows how to use them. Damn that pesky Primadonna Complex!

Despite some vague reports to the contrary, PX This has learned that the latest incarnation of "The Room Formerly Known as Boom Boom" on the 18th floor of The Standard Hotel will (as of tomorrow) officially be named The Bon Bon, and will begin admitting "the general public" from 4PM to 9PM for Supper (an extended version of their current Preview menu). The room will then be "cleared out" from 9 to 9:30PM, and (its current policy of) "exclusive" admittance will begin from 10PM onward.
BOOM.

• Which two longstanding nightlife impresarios have unexpectedly teamed up and are "thisclose" to inking a deal for a multi-level space in the West Village? Given their well-earned reputations (and the location of the building), this new venture could either be a smash hit of Waverly-Innsian proportions or a disaster of Beatrice-Innsian debacle-ness. At the very least, it should be fun to watch. For insiders, that is, since you won’t find anyone involved with the project offering up previews or preliminary information of any kind.
As per usual, you read it here first.
Now sssssshhhhhhhhhh…!

 

• Which not-so-longstanding F&B/nightlife impresario is "thisclose" to inking a deal with an established downtown restaurateur/operator? We have one word of advice, though: Better think twice about that "unbelievable" location. The community board for that district recently shot down a proposal for a restaurant on that very same street. Given the logistics of the projected impending business, putting all the eggs in that building’s basket may just be a colossal waste of time and energy.
OK, actually we have two words of advice (here’s one specifically for the restaurateur): Given the track record of said "impresario," putting any eggs in that big-cheese’s basket may just be a colossal waste of time and energy.
Don’t say we never warned you. But feel free to go ahead and learn the hard way if you must.

The Blabber on: the Boom Boom Room

yah so. everybody’s been buzzing bout theBoomBoom! and evidently, pxthis was no exception (it also seems we were the ones who got the information correctly the quickest, but hey what else is new).

then apparently yesterday, our ole buddy steve-lewis (and then grubstreet) broke the news "Kamil Parchomienko will handle the room…" !!

wow! and yay!

those of us who know and love and/or remember former original subMercer GM/Maitre d’ kamil-parchomienko (also of MercerKitchen, SunsetBeach, StandardMiami, and StandardLA) are of course totally delighted that kamil, the prodigal son, has returned to NYC after a loooong time away. hooray!
oh but i kinda feel a little bad for him though, cuz i don’t know whether or not kamil will appreciate his name being alls out there right before he is about to open the hottest spot in town. i mean like for example,
we alls know the WaverlyInn’s emil-varda has a fake name (and business cards). i also know two of my pals who run LaEsquina refrain as best they can from giving out their names too. and for sure, back in the day, i rarely ever gave peoples my real name either.
not that "the press" ever gave a shit who the GM or Maiterdees were before, so that’s a new one, but whatever.
but i digress.

 

anyhoo. steve-lewis goes on to describe "They want to do two seatings, 4–9 for small plates and 10–2/3 for late night. Super high-end Rainbow Room/Rose Bar/Windows on the World style $18–25 drinks and DP by the glass…"

wow again! and uhhh… kinda… THANK GAWD (?!)
i don’t know about you, but i’m a little sick of places that only cater to young unkempt insomniac kids whose trust funds haven’t quite kicked in yet. not that i ever went to any of those places (mostly cuz ha ahaa i couldn’t get in), but i just think it’s really really great somebody is finally thinking of us "olds" (ya know— the ones with TASTE) and giving us a place we can go and have fun before one o’clock in the fucking morning.

 

oh! yah— and since you were wondering
the answer is YES! that’s the kamil you’re thinking of. of course it is! who else would it be.
he’s also one half the character "michael" in the series (the other half is current BlueHill@StoneBarns GM, philippe-gouze) and if all goes well, he’ll be played by actor (and former clubUSA bartender) darren-kendrick.

 

hmmm how many is that now? ha ha ha ahaa haaah i’ll give a crisp new benjamin to the first person who can correctly identify every person in the book who now works at theStandard.

Leah Cohen Leaving Centro Vinoteca

"It’s been a remarkable year, but I have decided to continue pursuing my culinary education abroad," says Executive Chef Leah Cohen. So far, cursory plans include possible months-long stints in Spain, Italy, and Asia to further enhance her knowledge and technique, "I am very thankful for the opportunities that Sasha Muniak and his team have given me, but I do feel that now is an opportune moment to travel and study and continue to develop myself into a more well rounded chef."

"We are very proud of Leah and what she has accomplished for both herself and the restaurant," adds proprietor Muniak, "I have no doubt Leah’s enthusiasm in furthering her education will benefit her and her career immensely."

Current sous chef Richard Furey (formerly of The Grand Hotel Amrâth, Amsterdam) will take over control of the kitchen. "It’s been my experience that in transitional phases such as this, it’s best to prevent disruption in the kitchen as much as possible. I’ve been very happy with the success of Leah Cohen rising up from sous chef under Anne Burrell, and with Saul Montiel (Gusto Ristorante) taking over the kitchen after his ample experience as sous under both Jody Williams and Amanda Freitag."

Muniak further remarks, "Leah Cohen was very much in demand after her appearance on Top Chef. The team very capably handled her absence while she was called away to represent Centro Vinoteca in both off-site events and TV appearances. I am confident Richard and the team will competently live up to their new challenge."

• Which restaurant owner, already frustrated from being behind schedule and over-budget, is about to get the rudest awakening yet? If this person thinks the going is tough now, wait until the restaurant is finally open and running. Is history about to repeat itself? It almost already has, since much of what has happened thus far is straight from a past endeavor’s playbook. Next time when someone knowledgeable gives you free advice, try taking it.

 

• Which multi-milion dollar swanky midtown eatery is failing to live up to high expectations? It does approximately "20 covers a night," and despondent staffers are desperate to jump ship. Anyone hiring?

 

• Which chef of a famous Italian hotspot has been secretly doing consulting work for a new establishment mere blocks away? Some of the recipes are straight off the hotspot’s menu, and the hotspot’s proprietor isn’t exactly known for his patience and magnanimity. Good thing the hotspot isn’t "all about the food" — the newcomer likely won’t ever be a daunting competitor, despite its strikingly similar dishes being offered at up to 40% cheaper than the "original."

 

• Which well-known chef of a popular downtown destination may be ready to throw in the towel? Speculation has it the claims of "exhaustion" might just be a bluff tactic for less hours and more money. Unfortunately, this eatery has just about "had it," and isn’t bringing anything to the table. Try not to let the door smack you on the ass…?

 

• Which famous restaurateur has his eyes on a beleaguered bistro? Patience, my friend. The proprietor is up to the eyeballs with pressing matters, but will eventually be eager to discuss a fair partnership. There may be a few others players on the list of potentials, though, due to its lucky lucrative location.

 

• Which "ambulance chasing" attorney is about to be bushwhacked? Little does he realize his fatiguingly executed "every trick in the book" tactic isn’t going to result in the succumbing surrenderous settlement he’d gambled on. Too bad he hinged all his hopes on it, since his clients couldn’t afford a proper retainer. Guess he forgot there are a lot of other tricks in the book, too.

 

• Which nightlife promoter was busted trying to sell one particular hotspot’s precious hard-to-score reservations? He would have been permanently nixed from the nitery as persona non grata, had he not begged for mercy and leniency. Show some dignity, man.

The Blabber on: The Breslin

a blogger (that’s me) and two restaurateurs walk into a bar…

… order some drinks (one of them likes "white wine with a few ice cubes." go figure.), get a little tipsy, and —what else?— start gossiping like a bunch of sewing bee bitches. it went down a little something like this:

one of them was late. personally i think he just completely forgot our appointment and hopped into a taxicab right when he got my text message. hey, it happens (quite a lot in NYC, actually). which was fine cuz i needed a drink anyways. it gave me some time to peruse my environs there in theAceHotel lobby. it’s pretty neat in that chic trendy modern retro modern whatever kind of way. and the waitress is really nice.

there are a lot of "locals" and familiar faces and whatnot, so i am assuming peoples are traveling a ways from wherever they live to get here which is pretty impressive. on the stroll over, a block away i started asking myself who the hells is coming out here to stay in a hotel, it’s ridiculous. well there ended up being a lot of people around so it just goes to show how much i know.

then the other restaurateur arrived so that was great. he’s very cute and jovial and he dresses like a little kid. we sat around and chitchatted about the hotel, and then he asked the waitress to bring out the funky little snacks in the plastic baggies. these are little goodie bags filled with stuffs made by april-bloomfield, like caramel corn and salted almonds and salt&vinegar chips…. and chiccharón (! puertochinos, holla). it’s a good idea because apparently the kitchen is behind schedule what with contractor issues and things, so it’s pretty smart to have at least something for bar patrons.

evidently a Stumptown Coffee place just opened here— which is a big deal apparently, it’s like some coffee cultists’ favorite from seattle or someplace. supposedly it’s quite busy already with lines at the door "at 6AM." so good for them.
subsequently that sparked this big discussion about coffee and whether or not LaColombe "is better."

 

then we started all the really good gossip and
wooo child. lemme tell you. harharaharrr ben-leventhal would kiss keith-mcnally’s jock strap to get a lick of the dish i got last night, honey.
sigh but you see this is my problem

when i first envisioned doing this blog feature "story" whatever thingie, i imagined it might be called "An Evening With: …" and then i just go out and about with all the really cool peoples i usually see, but now when they start to give me the usual "offff the record, abbbeeeee" bullshit i would just tell them to stick it up their asses this time.
obviously i am full of it, cuz i am not about to go spilling all the beans— it’s not stuff i know first hand so i’m not really sure how much of it is true or how much of it to believe anyhow. like for example, there was this one story about frank-bruni’s recent party at theSpottedPig, and supposedly there was some discourse about his former review process wherein frank-bruni called himself a consummate "professional" and HAHAHAHAHAA that one is just entirely too preposterous to swallow.

oh there was also some blabber about joshua.david-stein too. because he wrote something about something something "used to own Gusto" something (?), and i don’t know if that kid is just dumb as a rock or what.

oh! ohhh but the big news! i’m not going to say. nyeeah.
you wouldn’t believe me anyways, bceause everybody always just wants to believe what they want to believe. but haa ahaa believe me if i get so much as a sense of a whiff of an inkling i am about to get "scooped" or whatever, i will so bust that shit wide the fuck open (as usual, bitches)! so you may want to stay tuned just in case!

theBreslin is set to open probably "october first." it’s about 150 seats. it has a big open kitchen. it will have two bars— a large one (directly on the left if you enter from the street) that’s an antique "purchased in harlem." there will be a "bar rail" opposite with small tables lined down the center.
there’s a "grandfathered" mezzanine level as well, with a smaller (also antique) bar. there are refrigerated wine racks lining the wall, and there will be an "owner’s nook that looks down on everything" off in the corner at the end of the wine racks.
downstairs will be "banquettes banquettes more banquettes" and one (or two?) with "a curtain" cuz he "always wanted to do that."
the floor and (16 foot high, ornately molded) ceiling are "original."
and a "big round" table in the middle right in front of the kitchen.
i think it will end up looking quite beautiful. so the only thing the persistently pessimistic perfectionist in me can think to say is: i didn’t notice if there’s a built-in vestibule but i hope so cuz otherwise it looks like it could be potentially mad freezing up front in the wintertime.

 

i also got to meet the other restaurateur’s brother and a friend of his from london. they were nice.
